This recipe pairs tofu with other nutritional products like yogurt and fresh fruit, which makes a power-packed “milk shake” that is rich in calcium, Vitamin C, potassium, and fiber. I love to make smoothies for breakfast and sometimes for dessert. I hope you enjoy this recipe.

Recipe:

½ cup sliced banana

½ cup frozen sweetened sliced strawberries, partially thawed

½ cup drained soft silken tofu (about 3 ounces)

½ cup vanilla low-fat yogurt

Sliced fresh strawberries (optional)

Combine the first 4 ingredients in a blender; process until smooth. Garnish with sliced strawberries, if desired. Serve immediately. Yield: 2 servings (serving size:  ¾ cup)
